I have this wonderful best friend who doesn’t live in the same state as I do, but I’m fairly sure I see her more often than most of my friends who live across town. She is the one I can count on to always be honest with me, even when it’s tough, and you should see her devil’s advocate routine. Spot on, that one. On a personal note, try to find that friend who is always honest with you, no matter what. I mean, sure, she’s going to lie to me and tell me I don’t look fat, but on the REAL stuff, matters of the heart and the like, R’s got my (considerably bigger) back(side).
She’s also that kind of friend who brings you cookies at Christmas, and this year, something super exciting – cookies from a COOKIE EXCHANGE (I always admire people who have their $#it together enough to actually bake before December 23/24/25, let alone have it be edible and presentation-worthy enough to exchange with others – bravo!). I’ve been picking through the good stuff, and my new favorites are the Nutella Stuffed Peanut Butter cookies.
Wow. I don’t actually LOVE Nutella, but someone I know who’s very near and dear to me is always trying to convince me it’s awesome, and I’m always trying to convince him that peanut butter is clearly superior, which is a true statement. Well, why not split the difference and just stuff some Nutella in a peanut butter cookie and call it a day? That’s what I gathered was happening from this cookie exchange, so I’ve scoured the internets (it was like a 3 second Google search) to find you what I believe to be a very similar recipe from Handle the Heat.
Nutella Stuffed Peanut Butter Cookies
- 1/2 cup Nutella
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon fine salt
- 6 ounces (1 1/2 sticks) unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 3/4 cup creamy peanut butter
- 1 large egg
- 1/2 teaspoon vanilla
