Pumpkin Macaroni & Cheese
From the Martha Stewart-run “Taste of the Test Kitchen“:
1 pound pasta- cook until not quite al dente
Melt 1 stick of butter, stir in 1/2 cup flour- cook until bubbling. Whisk in 4 cups milk slowly and cook until simmering. Remove from heat and whisk in 2 cups grated cheddar cheese, 1/2 cup grated parmesan and season with salt and a grating of nutmeg.
Stir in the pumpkin (about 1 3/4 cups) and cooked pasta. Serve immediately or place in a baking pan, top with more grated cheese, bread crumbs and dot with a tablespoon of butter. Bake 400 degrees for 20 minutes. Heaven!
