Well, it’s only day 2 of my recipe-a-day until 2011, and I’m already busting into the Christmas cookie recipes I plan on trying this year. These cookies sound so good, and I’m intrigued by the addition of vanilla pudding mix. I am 100% going to make these for Christmas, so I’ll update you and let you know how they are. This recipe is from Kraft Foods and if you read the reader comments, it seems that a lot of readers tried out chocolate pudding mix with great results, too.
Pudding Chocolate Chunk Cookies
HEAT oven to 375°F.
BEAT butter, sugars, dry pudding mix and vanilla in large bowl with mixer until well blended. Add eggs and baking soda; mix well. Gradually beat in flour. Stir in chocolate.
DROP teaspoonfuls of dough, 2 inches apart, onto baking sheets.
BAKE 8 to 10 min. or until golden brown. Cool 3 min. on baking sheets. Remove to wire racks. Cool completely.
